I just came from a seafood market to buy some seafood bisque soup and asked the owner if the ever carries wahoo. He says oh wahoo is really albacore tuna so I debated him saying that it was not. He said a man came in from Hawaii and told him that and I said well don't believe him. And told him that we caught our own wahoo in Hawaii. Well now that I picked an argument with him.....I am correct it is NOT albacore tuna right?http://abacoforum.com/forums/images/icons/icon5.gif

Thanks! He was very adamant about it and than I started doubting myself when I went to my car. But we were almost arguing about it and I felt ridiculous in standing my ground.....but he was getting me aggravated.

I have had albacore tuna and wahoo (which is one of my favorites) and they ain't the same! I agree with Tim. You need to find another seafood market.

Bahamangie, Was it you who bought the wahoo not long ago and said it didn't taste as good as what you had in the Abacos? Maybe that was tuna, too. Aren't wahoo related to mackerel? I guess I could google it, but too lazy.

I googled it and they are akin to mackerel. I thought they were. I used to know a lady years ago that made the best King Mackerel you ever put in your mouth! Her husband would go deep sea fishing and brought home a wahoo and that was my first "love affair" with wahoo.

I agree with you guys about the seafood market. I was thinking of that this morning. What kind of place does NOT even know their own fish? And I think he was the owner! Yes, it was I that recently purchased wahoo from our supermarket and it did look and taste like wahoo, I just overcooked it making it on the dry side. I have cooked it before and did not make that mistake. It made me wonder what he had in the seafood bisque! You're right, I am not going back there. They are new owners. Thanks for all the input.

I guess it depends on the kind of mackerel you use. The King Mackerel was light to me and the lady I knew even fried it, but lightly.

That was the way I heard it needed to be cook. One time (like 30 years ago) my father and husband went on a party boat (fishing) and they caught tons of mackerel but gave them away because my father had said they were an oily fish and needed to be fried. Generally, we do not eat fried food. Only occasionally and this year have been eating fried chicken out. I don't fry. Started out because it was too messy (in my younger years of marriage) and than realized how bad it is for you.

I don't fry foods like I used to either, but I enjoy it every once in a while. Hey, we all need a little grease in our system! LOL

When I was growing up, we cooked king mackerel steaks on the grill with barbeque sauce. It was pretty yummy. I don't recall ever having it fried and my mom was not shy about frying at all. I don't fry fish either due to the mess mostly -- never really know what to do with the used oil -- with the exception of catfish (hubby from Alabama occasionally craves it).

For the wahoo someone so kindly gave us on our July trip to Abaco, I broiled in the oven using Cuban Mojo Criollo marinade that I brought from home but was available for purchase at Sids on GTC. The smoke from the oven broiler kept setting off the fire alarm every few minutes so I was on my toes cooking that meal. No enjoying my rum thang while the fish cooked.

I love fried catfish. Haven't had any in a while. Like I said, it was lightly fried, not deep fried. I think she put a few spices in the flour, dredged it and fried it in a little bit of oil. Even though it was fried, it tasted very light. Several times I asked her how she did it. Of course, being a southern cook, she said I don't know what to tell you, it takes experience! LOL

We were in NC about 3 years ago and our waterfall guide took us to a cute inn for lunch and my daughter had some kind of fish like that. It was delicious. I actually love fried flounder but rarely have it. Usually broil or barbeque our fish. That is the ONLY thing I really like about Hawaii....their fish markets sell the locally caught fish and we buy it daily and grill for dinner with cole slaw from KFC. They make the best cole slaw. and a baked potato and there is dinner! Making me hungry.

Actually, we can do that in MH cause they have a fish market and they even have a KFC. Will need to do that next Abaco trip.

Again, you're on the $. Wahoo actually, if memory serves is it's own species...no other fish, though some are related, belong to the same ...(Acanthocybium solandri)...kinda like a cross between the mackeral and billfish families.

Actually I don't mind the cooking, it's the cleaning up. (hey, I've been doing it for over 45 years now!).

The Europeans are much more forgiving abut King Mackerel, and eat it many ways but mainly as "fish and chips." Of course, they also like dogfish chips, a diminutive species of shark that most Americans wouldn't THINK of eating. But BBQ Mack isn't too bad if you bleed them good when first caught, and then cut the red stripe out of the middle ASAP. Note that Spanish Mackerel is a much better fish to eat but is much smaller.

Wahoo is something we rarely catch down here in TX so it a real prize. We usually cut steaks for quick broiling or grilling and eat the cheeks and tail scraps like sushi. Yum!

Here's one you might have not tried - loin cuts, cutting the fish crosswise. Just like other stuff, the meat is sweetest next to the bone ... I'm dying to try a wahoo that way! And hey, that KFC coleslaw rocks, doesn't it?

Speaking of cole slaw, how about the cole slaw at Laura's Kitchen, GTC? I am not normally a cole slaw eater, but I love it there. I think it has bits of pineapple in it.
