No, Sammie isn't being weird again - even the New York Times has an article about turkey spatchcock (check it out!). I think I'm going to try it this year.
Anyway, it's an old English/Irish term for roasting bird by taking out the backbone and flattening the bird on the grill or in the roasting pan. Save the neck and backbone for gravy ... use stout sheers or a knife to cut an inch or so on either side of the backbone, breast side down.
Recommended is to clean the now-flattened insides real good and when dry use some salt on the cavity for good measure. Herb away if that's what you want. Then turn the bird back breast side up, flatten some more, and do whatever you usually do as far as cooking - don't forget the meat thermometer.
Can't say I've done it yet, but claims are that the white meat is not dry, and the dark meat is more cooked, and stuffing is not such a big deal. If it works for anyone, let us know ... and Happy Thanksgiving in advance.

Well let me put on two hats here - Maynard G (for Walter) Krebs and Alton the nerd on the Food Channel.
No let's not ... too much work!
But Lori likes the idea and we plan to put the stuffing under the turkey, which would be butterfly butchered.
You're just mad because Alton said "don't put the stuffing inside the turkey." I agree, what an idiot-bumbler doofus Alton can be at times. But the spatchcock way (I love saying that), the roasting bird still bastes the stuffing with natural drippings ... I mean how bad is that? -sammie

Man, I'm going to look ridiculous when I show up at the FFT, with the shin guards, beer goggles, snorkel, and Pink Tutu.
Can you imagine me trying to buy some of that wonderful bread they bake when I look like a degenerate space alien? :confused:

Beer chicken is really tasty. Just pop a can and put it on the grill. For a turkey, maybe need a big***Heiniken.

Yes, beer can chicken is great. Very tender. But you have to use a good beer.
